Slow Cooker Pork Tacos
I found a great deal on a 2.68 lb boneless, pork loin roast. It was chilly outside so I decided tacos sounded really good! I used lots of tomatoes in mine. You can use as much as I do, less or none at all. This recipe had plenty of pork leftover that I turned into BBQ pork sandwiched the next night!
INGREDIENTS:
2 lb.-2.5 lb. Pork Loin Roast
1 (14.5 oz) can diced tomatoes
1 (14.5 oz) can stewed tomatoes
1 (10 oz) can Rotel
1 medium bell pepper, cut into thin strips
1 small onion, cut into thin strips
1 cup chicken broth or stock
1 envelope taco seasoning
Flour tortillas
DIRECTIONS:
1. Place cut strips of bell pepper and onion in bottom of slow cooker.
2. Pour in the diced tomatoes, stewed tomatoes and the Rotel. Stir well.
3. Place pork loin on the top of the veggies.
4. Mix taco seasoning into chicken broth/stock. Stir until seasoning is dissolved. Pour over pork loin.
5. Cook on low 6-8 hours.
6. Shred and fill tortillas. Top with any toppings you desire!
