Easy Chicken Teriyaki Stir Fry

I have always wanted a wok even though I am not a big Chinese food connoisseur. So, I bought one and decided to throw a meal together. This chicken stir fry was fabulous! Just a few ingredients for a great flavored meal

INGREDIENTS:


1 tbsp. olive oil
4 boneless, skinless chicken breasts
1 small onion, diced
1 small bag frozen broccoli
2 cups minute brand rice
1 cup jarred teriyaki sauce (more or less based on your taste)

DIRECTIONS:

Heat olive oil in wok over medium heat. Cut the chicken breasts into small chunks and place into wok stirring often. When the chicken chunks turn white and juice is starting to run clear add onion and broccoli. At this point make an aluminum foil tent and place on the wok. This will help to steam the broccoli and cook it through. Stir every minute or so replacing the tent each time. Once the broccoli is heated through and the chicken is browned remove the tent and add the teriyaki sauce and stir to incorporate. While the stir fry is heating cook the rice according to package directions. Serve stir fry over the rice.

*This would be delicious with stir fry vegetables also. Add whatever you desire.
